Bacon, Kale, Cheese Frittata Breakfast Recipe

Looking for a simple and delicious make-ahead breakfast for those busy weekday mornings? This is the frittata for you! I make this during my Sunday meal-prep and divided it into individual containers to store in the refrigerator for the week. Pop it in the microwave for 30 seconds to 1 minute, top with hot sauce and you have a quick and easy breakfast ready to go!

Ingredients

  • 4 slices bacon
  • 4 cups kale, chopped
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 8 eggs whisked
  • 2 ounces white cheddar cheese, shredded

Instructions

  • Preheat oven to 350°F
  • In a medium skillet, cook bacon over medium-high heat until crisp.
  • Remove bacon from skillet with a slotted spoon and let drain on a paper towel.
  • Add kale to bacon grease and sauté until wilted.
  • Add whisked eggs and spices to wilted kale. Stir and cook until almost firm.
  • Sprinkle with cheese and arrange cooked bacon on top.
  • Bake until cheese is melted and eggs run clear, about 5 to 8 minutes.

Notes

Meal-Prep Tip: Divide frittata into 4 small containers and refrigerate for easy grab-n-go breakfast during the week! Re-heat in the microwave or oven.
